I love this magazine so much that every year I give gift subscriptions to family and friends. There's no mistaking which version of the recipe is the best. They show, for example, several different ways the ingredients and quality of ingredients affects the final product. It might be shortening compared to using butter, or even the cooking method or the temperature used. At one time I was purchasing an ice cream maker, and after reading their reviews took the one I had just bought back to the store and got the Kitchen Aid mixer attachment. Turned out to be a successful purchase.

I enjoy this magazine because I like learning why things work a certain way. It is focused primarily on food science, so each recipe takes a page or more to describe all the different methods or ingredients they tested in order to figure out the very best way to make the food. It's great for learning about food and how things work, but I find it often impractical for everyday cooking. Recipes are often very involved and complex. The authors do try to avoid ingredients that are hard to find. I also find that some ingredients the authors commonly use are more easily found on the east coast (like "meatloaf mix"), and they also avoid a lot of spicy ingredients.
The recipes and techniques are based on the PBS TV show, "America's Test Kitchen", so if you're not sure about the magazine, watch a couple of episodes to help you decide. You can watch it online or find it on your local PBS station (in most markets, it seems to come on around 5 in the evenings on weekdays).
Definitely would recommend this magazine. Have had success with many recipes. Nice mix of recipes as well.

I bought Cook's Illustrated magazine as a holiday gift for my bother-in-law along with several other cooking magazines for him: Everyday with Rachel Ray, Cooks Digest, Healthy Cooking, Everyday Cooking and others. BUT the ONLY one he really wants to continue with is Cook's Illustrated. He and my sister can't wait for it to arrive. Loves the layout, info is useful and recipes are great. Don't hesitate to order. This one's a winner.

I love my Cook's Illustrated magazine. It's great for the beginner to the advanced cook. I look forward to it coming every month. This is one magazine that I will keep every issue. Others go into the recycling bin but not my Cook's Illustrated magazine! I keep these for reference.
