- Pros: Excellent healthy living and well-being articles, with some good recipes
- Cons: Not as focused on vegetables and legumes as I thought it would be
I am not a vegetarian, but I subscribe to the magazine looking for great vegetable and bean dishes. My one frustration with the magazine is that many of the recipes are traditional meat dishes that simply replace the meat with various meat substitutes, such as "soy sausage" or "chicken-style soy meat substitute, such as Veat" or "vegan meatballs." Since I am trying to minimize processed foods in my family's diet, I am not thrilled with efforts to take a soy bean and turn it into a "chicken." I would rather eat a chicken. VT is a great magazine for its target audience, but I am still searching for a resource that focuses just on vegetables and legumes and provides recipes that make them taste amazing.

I am not a vegetarian yet but am eating more healthy. I have tried many new items based on references in this magazine. For the first time in my life I made polenta lasagna. It was great. I can modify the recipes as I need. I also signed up for offers from the advertisers and get coupons for products like veggie wash. Bob's red mill is great and I can get it and Hodgson's mill products in the grocery store. The only thing I do not like is complicated or weird ingredients that may be hard to get. I even eat tofu often now and this magazine opened my eyes for how to cook it. Thanks VT.

Being a new vegetarian, this is a great magazine. My boyfriend is vegan, so I love finding recipes to make for him.
